Ingredients

Ingredient Metric UK Cups Notes / UK substitute
Beef liver (kebdah), thinly slicedكبدة بقري 500 g Stocked: Zambahola sells whole 1kg packs — slice thin.
Green pepper, finely sliced 1 large
Green chilli, finely sliced 2 (or to taste)
Garlic, crushed 6 cloves
Ground cumin 1 tsp
Ground coriander 1 tsp
Sweet paprika 1 tsp
Lemon juice 1 lemon, plus extra to serve
Olive oil + ghee 2 tbsp each
Salt, pepper, chilli flakes to taste

Method

  1. Drain the sliced liver well. Toss with half the lemon juice, salt and pepper. Rest 5 min.
  2. Get a heavy pan or wok screaming hot. Add oil + ghee.
  3. In go the pepper, chilli, garlic. Stir 30 seconds — you want fragrance, not colour.
  4. Add the liver in a single layer. Don’t crowd. Sear 60 seconds, flip, 60 more. The pieces should still be slightly pink inside.
  5. Off the heat add cumin, coriander, paprika, the rest of the lemon. Toss once. That’s it.
  6. Pile straight onto warm baladi bread. Pickled chillies, more lemon, and a glass of water on the side.
