Egyptian Story

Coriander (kuzbara) is a classic Egyptian spice used in countless home-cooking recipes.
It is especially important in dishes like molokhia, lentil soup, and fish marinades.
Egyptians often toast the seeds slightly before grinding to unlock a warm, citrusy aroma.

Usage

  • Grind and add to molokhia

  • Season lentil soup (shorbet ads)

  • Use in fish marinades

  • Mix into spice blends (dukkah, kofta, shawarma)

  • Toast seeds lightly for deeper flavour

  • 1 tsp ground coriander

  • 3–4 cloves garlic, minced

  • 1 tbsp butter or oil

  • Pinch of salt

Method:

  1. Heat butter or oil in a small pan.

  2. Add garlic and fry until golden.

  3. Add coriander and stir for a few seconds.

  4. Pour the mixture (“tasha”) over molokhia.

  5. Stir and serve immediately.

Gently citrusy flavour that pairs well with cumin.

Toast and crush for stews, sauces and spice mixes.

Coriander seeds are a flavouring used in modest amounts and help build layered tastes in dishes.

Children may first notice coriander as ‘the good smell’ that appears just before dinner is served.
